Red Braised Pork

Ingredients

450 g pork belly with skin, cut into 11/2" chunks
1 scallion green, cut into 1" pieces
5 pieces of ginger
4 star anise
2 tbsp peanut oil
30 g rock sugar
2 tbsp Chinese dark soysauce
2 tbsp Chinese cooking wine
Salt to taste

Method

1. Put pork in boiling and simmer for about 3 minutes. Remove and drain well.

2. Put oil in the pot, heat, and then add sugar. Heat till sugar melts and darkens.

3. Add scallion green, ginger and anise. Stir.

4. Add pork, stirfry till pork changes color.

5. Add enough water so as it just immerses the pork. Add salt, soysauce, cooking wine. Heat till water boils. Lower heat and simmer. Remove ginger, scallion and anise when about 1/3 is left.

6. Simmer till water is about to dry out but not completely gone.

7. Serve with white rice.
