Chicken with Potato

Ingredients:

1. Potatoes, 250 g, cut into chunks.

2. Half of a chicken, cut into chunks.

3. Eight dry mushrooms.

4. Two tbsp peanut oil, 1 tbsp oyster sauce, 1 tbsp cooking wine, 1 tbsp white sugar, 1 tbsp soy sauce, star anise, scallion, ginger, and salt to taste

Preparation:

1. Soak mushrooms in water for about an hour.

2. Marinate chicken in oyster oil and cooking wine for 10 minutes.

3. Heat peanut oil in the pot; add scallion, ginger and anise.

4. Add chicken; stir-fry until chicken colors.

5. Add soy sauce and white sugar, stir-fry. Add hot water, enough to immerse chicken. Add potatoes and mushrooms, put lid on and cook until water boils. Lower heat and simmer for an hour.

6. Add salt. Turn up heat and cook until soap thickens. Serve.
